Is there a way to create a custom installation for Aerospike - i.e. have non-standard locations for configuration, start up scripts, etc. ? I haven’t been able to find any documentation on this.

Currently no. The standard package installations are the only way. However, we are working on one that will be more flexible. Please check back in every few weeks for the announcement.
